Executive Summary

The blue fish restaurant will be the best sea food restaurant, which will have most of the seafood items of Japanese cuisine. The restaurant will be located at the heart of London at Deans Street of London. The area is full of other restaurants, cafe and night clubs. The design of the restaurant will be the distinguishing mark of the restaurant and the interior of the Blue Fish will give a sense of the under-water world. The sitting arrangement of the restaurant will be cosy and comfortable where guest can enjoy the meals and deals with slow and soft background music.

The mission of the Blue Fish is to provide best of food to its guests and to be the leader in the industry by providing the best service and food quality. The potential target market of the Blue Fish will be tourists because the adjacent area is most of the time are filled with tourists. Other potential customers will be those who have refined taste in sea food and Japanese food. The initial financial forecasting suggested that the restaurant will need 80,000 pounds to meet all the expense in a month. The forecasted monthly turnover is around 270,000 pounds. So financially the project is feasible to initiate.

Objectives

The objective of the Blue Fish will be to provide quality of the food in a comfortable environment where customer feels delighted and happy. The key objective of the Blue Fish will be to provide higher than the usual customer service. Key important business objectives of Blue Fish are given below (for first three years).

•To keep the labour cost fewer than 30 percent of revenue

•To keep the cost of food between 30 percent to 35 percent
