The literature review starts off by showing how the green movement has affected even the world of business. Now, being marked as green improves the image of any company and in the hotel industry where image is everything, guests are now part of the process of green management. Simple requests like towel and sheet change are now de rigueur and clients who care about the environment are just happy to oblige. The researcher then defines green management and its components such as, green waste, green energy and green building. This study will determine how these three components are being used and applied in the Centara Hotels and Resorts Group. Finally, this literature review discusses how green management has affected the hotel industry.
Environmentally Sustainable Hotel Management
Environmental sustainable hotel management explains the sustainable environmental management to the hotel industry, along with recognition of the open nature of hotel systems and large amount of human interfaces that hotel systems have. It covers operational issues such as impact on environment, waste and resource management, control, emission, pollution and sustainability (Kirk, 1996). The hotel industry is related to a service controlled sector, and a noteworthy resource customer (Bohdanowicz & Martinac, 2003). Hotels work 24 hours, providing diverse facilities and services for the purpose of leisure and calmness to the guests. They are based in small sized cities that engage the accommodation and assistance of people associated with the demands for food and waste and water management. Hotels can be divided into different categories and segments but the range of services remains the same. The range and level of services vary between different hotels. Hotels are managed by a management team that run the operations of hotels and are not always managed independently. Environment is impacted by hotels in many different ways (Revilla, Dodd & Hoover, 2001). Kirk (1996) pointed out that hotel that has historic significance and are located in the areas of natural beauty have a subtle environmental equilibrium. The site of hotel does not only impact the surroundings but also the level of comfort and luxury offered by the hotels for attracting the consumers to the target locations. Provision of more comfort and luxury would result in greater consumption of power, water and other scarce resources. Tzschentke, Kirk and Lynch (2008) indicate that their research sample (of hotel managers) mainly highlights the impact of the hotels on the environment and some other researchers highlighted it as their only concern. Hotels need to deploy specifically designed environmental policies if they want their hotel management operations to be environmentally sustainable.
