SECTION 1: IDENTIFY CUSTOMER PREFERENCES

Activity 1

What are some of the expectations customers have in relation to food quality?Answer: There are mainly two types of food quality that customers expect or observe: product oriented quality and process oriented quality. In relation with product-oriented food quality customers expect the food to be healthy as they observe elements like percentage of fat, muscle size of meat, starch content in potatoes, or cell content in milk.

What factors can influence the appeal of presentation of food dishes?

Answer: The first impression of any food dish is its presentation, not the taste, which makes it delicious in the eyes of customers. The factors that can influence the appeal of presentation of food dishes include textures, colors, shapes - and a combination of all these that can create most effective form of presentation. Garnishing holds an immense importance in presentation as it attracts the customer towards the dish. Appealing presentations of food dishes may include the use of a separate sauce or the sauce the dish comes with as a form of decorative design. Shape and the combination of colors of a food dish like vegetables also play a vital role in attracting customers. In addition, the presentation must also focus on the main portion in relation to the side dishes. Thus, there are many factors (colors, textures, shapes, garnishing, etc) that hold an immense significance in creating an appealing presentation of food dishes.

What must the kitchen team do to ensure timeliness of delivery?

Answer: In order to ensure timeliness delivery of food, the head of kitchen team must make sure that kitchen employees arrive on duty at appointed time. In addition, it is also essential to ensure that food production personnel work an efficient and professional manner at all the times. To facilitate this, kitchen team must have range of cook and serve commodities, since it will help in meeting customer expectation of timeliness of delivery. Moreover, a kitchen team can also practice the habit of stop measuring delivery times at the final delivery point; rather stay one step prior to the final delivery.

Answer: Today's highly globalized and IT advanced world offers several ways of distributing and gathering the surveys. These options include email invitations, social media, and embedded surveys. In addition to these technological advanced modes, a survey can be also be distributed to various customers at shopping malls or restaurants to be filled out and collected back.
