CHAPTER 1: INTRODUCTION

Background

Nutrition is being recognized for the role it plays in the prevention of many diseases and in promoting and preserving health. This is the area of medical research over development today and is a phenomenon that is occurring throughout the world. The reason for this is simple, 70% of diseases are caused by nutrition-related causes. (Lewontin 2006)

The leading causes of death worldwide are heart disease, various cancers and stroke, 50% of these deaths are directly related to nutrition. Diseases such as stroke, hypertension, arteriosclerosis, cancer, diabetes (in adults) osteoporosis, arthritis, anemia, gall bladder disease and even certain diseases of the gums and teeth are related to nutritional factors (i.e., lack of certain nutrients). (Lee 2009)

Introduction

There are a number of chronic diseases that are less serious but nevertheless have nutritional origin. Some of these diseases are: headaches, nervousness, anxiety, depression, allergies, and digestive problems, some types of asthma, most of the problems of skin (especially psoriasis), rheumatism, and arthritis. It is estimated that 70% of those attending do so on medical advice direct or indirect problems related to nutritional factors, again, because of the lack of adequate nutrition. (Lau 2008)

The Diet consists of a basic understanding of the 4 food groups and the ideal combination to provide a balanced diet and this is equivalent to that information so simple that we learned in high school. Nutrition On the other hand involves the knowledge of those elements that promote good health. (Kelly 2008)

Theoretical framework

However, science is discovering that there is more and that there are two areas that are considered essential: these are the study of micronutrients and Nutritional Factors Botanical (herbal). Micronutrients include many different types and very small amounts of certain vitamins and minerals, essential fatty acids, fiber and certain trace elements.
