Introduction
The Pickle Industry suffers with a big problem of inefficiency in its operations due to low degree of atomization, for instance, spices like onion are peeled manually. The second big problem, the industry faces is short-supply of labor during peak seasons, which limits the capacity. In US, there are over 500 pickle manufacturers, spread across the country with major concentration in South US. Most of these units are operating on a much low scale i.e. the cabin and little scale industry, with few large-scale players in market. The consumption pattern is also skewed towards South US. Off late, the export of pickle has witnessed a rapid growth primarily due to increasing US Diaspora around the globe and increased awareness about US cuisines in Western countries. (McCarthy 2008)
Description and Application of Onion Peeling Machine
Brief Description of Innovation
The onion peeling machine which operates with single or three phase 2 hp motor. Rotating shaft with multiple rubber pads is placed inside a stainless steel drum. The shaft rotates with the power supplied by the motor. The vertical rubber pads are connected to the shaft randomly. Full un-peeled onion which is put into the hopper enters the stainless steel drum in which the vertical shaft with rubber pads is rotating. (Levitt 2009)
The onion gets contacted with the rubber pads and collides with other onion and the skin gets skimmed off and falls down. A blower section placed near the outlet blows away the skin to a dust collection box via an aluminum pipe. The peeled onion is collected at the outlet through the collection box and is 100% free from damage. At the hopper there is a suction system which sucks out the dust and skin. Harvey 2008)
